Executive chef Mark Briggs has expertly crafted and evolved the ‘fresh from the sea’ and ‘fresh from the farm’ to the plate menu, defined by its ethos of plentiful visibility with a tailored, personal approach to impeccable service. Guests can choose to dine in the main dining room, on the alfresco dining terrace, or sit directly at the oyster and sushi bar, where the chefs slice and prepare fresh sashimi right before your very eyes.
Whether dining for lunch, dinner or somewhere in between, Waterfront welcomes guests with it’s all day menu and kitchen open late for nearby post-show diners.

He was one of the first people to establish a seafood cafe in Australia. Dimitrios sponsored his nephews Nicholas (in 1924) and George (in 1954) to come to Australia and help expand his business.
