Mark Briggs, Executive Chef at Waterfront Southgate, prestigious seafood bar and grill

Mark Briggs is an accomplished chef with more than nine years international experience. Originally from a small town in the North of England, Mark established his career working in three Michelin star restaurants across the United Kingdom including, La Tante Claire and Longuieville Manor.

Throughout his career, Mark has had the privilege of working with renowned chef’s including, Jamie Oliver, Pierre Koffman, Mauro Bregoli and Daniel Clifford.

Moving from England to Australia in 2004, Mark began working for Shannon Bennett at the original Vue de monde in Carlton. During his time at Vue de Monde, he was appointed Head Chef of the restaurant at Normanby Chambers, was instrumental in establishing and running Café Vue at Heide.

Mark is passionate about creating food from fresh local ingredients.

After winning The Age Good Food Young Chef of the Year in 2013 Mark left The Sharing House, and is now the executive chef at Waterfront Southgate.
